Why does Threepio claim 'I'm not very good at telling stories' in ANH, but he holds everyone attention in ROTJ as he tells the story of the Trilogy complete with sound effects... Obviosuly, GL changed his mind while at the typewriter in 1982. Yeh, I'll change that...C3PO is good at telling stories...

Don't even get me started on the 3PO/Anakin/Uncle Owen/Tatooine plot screw-up. Why these blatant obvious mistakes?

Because George Lucas did NOT have this story in his head for the past 30+ years as he claims. He made it up as he went along. At some point he thinks...let's go this direction...without any consideration of loose ends or conflicts in the overall story. I like his contribution to cinema, I'm a fan since '77, but when he was shooting Star Wars in 1976, I don't believe he had an inkling of anything to go in ESB. Likewise, Leia shouldn't have kissed Luke on the mouth in ESB if Lucas already planned of confirming them brother/sister in ROTJ. It's a matter of making things up as you go along, but wanting people to believe you've had this epic saga all planned since the late 1960s.

Didn't Yoda and Obi-Wan exchange a conversation implying that Luke had a sibling in Empire? I'd say Lucas already knew by that point.

It's called character development. Pretty much all the characters grow in some way in the period between ANH and ROTJ.

Lucas may have been making things up as he went along, but that doesn't mean Leia shouldn't have kissed Luke. What's the big deal? Neither of them knew they were related. Besides, it adds to the Leia/Luke/Han Solo Love Triangle that gets resolved at the end of ROTJ just after Han gets really jealous.

And that is the only reason why he added that sister bit. It was a quick (and kinda cheap) was of resolving the love triangle. Had he desided to go ahead with the 3rd trilogy, that would proably not have been thrown in.

The best proof that there was more to come after ANH in 77 was the fact that Darth Vader is the ONLY one to escape. At that point, all we know is that he 'killed' Luke's father as well as Obi-Wan. His escape from justice tells you that there's more to come in the saga.
