That's _why_ they're fun. Fresh blood. The 'main' characters have already had their stories told - anything more they do is anticlimactic compared to the lives they've already led in the movie trilogy.

Find them in any bookstore, it's all pretty straightforward. One tricky thing is that though they're numbered 1-9 like a series, they're not really a single series. #1-3 tells one major story arc about Rogue Squadron under Wedge in the years following ROTJ where the Rebellion is still the Rebellion and the Empire still controls Coruscant. #4 is a (somewhat tacked on but fun) followup to clean up loose ends left in #3, #8 is an (even more tacked on but somewhat more interesting) followup to the followup. #5-7 is written by a different author and follows a separate story arc about a separate squadron while Rogue Squadron remains in the background. (great subseries, by the way, one of the best uses of humor in any of SW.) Finally #9 is a standalone story that doesn't really connect to any of the other installment's plots or characters in any major way. It's X-Wing #9 in name
