I think im missing something terribly here:

I dont get it. What does that have to do with the fact a clone army has been created, or even that it was ordered by a supposedly long-dead jedi master?

Yes. Theoretically it should be difficult to surprise a Jedi and it should be impossible to oragnize a large army in secret. Their powers of intuition, observation and ability to foresee events should have alerted them to what was going on but the dark side clouded their vision.
