Umm, Saruman was a Maiar, something intrinsically far more powerful than Dooku. Sure, Saruman was old, but in actuality he was close to a god, as were all the Maiar (such as Sauron, the Balrog, Gandalf, etc.)

Saruman would summon a snow storm or something and kick Dooku ass before he was close enought to use the force but if he was verry close to begin with his lightsaber would slice saruman.

I generally dislike arguments comparing 2 fictional characters from completely unrelated (even when one rips the other off) stories...but wth: There is no way in hell that Dooku would win in a fight, close or long range, against a wizard like Saruman. Uh-uh, it ain't happening. Long range is obvious, Dooku couldn't touch Saruman.
Short range, Saruman casts a shield around himself and Dooku can't touch him anyway.
