Dooku was playing both sides to make sure the war started. He feigned surprise about the clone army because he was in the room with the Separatists. If he had said, 'Oh yeah, I knew about those clones', then his credability with the Separatists would be blown.

Are you sure Dooku playing both sides ? I think Sidious playing both sides, but may be Dooku has a mission (from sidious), end may be he don't know everything about Sidious/Palpatine Plan.

The movie makes it quite clear that Dooku is playing both sides on instructions from Sidious. (Which doesn't mean he's not being played by Sidious, of course.)
From one of the final scenes:
COUNT DOOKU The Force is with us, my Master.
DARTH SIDIOUS Welcome home, Lord Tyranus. You have done well.
COUNT DOOKU I bring you good news, my Lord. The war has begun.
DARTH SIDIOUS Excellent. Everything is going as planned.
