Okay, calm down for a moment. It's so obvious, and we were so keen to speculate on the mystery, that we missed the one simple explanation that Sidious is NOT Jedi Syfo Dias.
Because we already know that Sidious is PALPATINE. And Palpatine's been walking around in his non-cowled, human form for years, since way back when he became Senator for Naboo. Do you think the Jedi wouldn't recognise him, or that he'd have had some disguise and been able to lead a double (ok, triple) life as a Jedi and Senator?
That's ridiculous.
I can't believe the thought even entered my head before I realised that it's utterly impossible.
So... who is Syfo Dias? I think he's Syfo Dias... and nobody else. Perhaps he was working for Palpatine... in league with Dooku too maybe.

I believe Sideous went to Kumino and requested the army, and just said his name was SifoDyas after SifoDyas died.
