Not any harder to believe than say,.....light sabers, sound in outer space, faster than light travel, little green men on saucers, levitation, mind reading etc.... It seems a bit odd to pick and choose which to 'believe' in a movie. Relax, go with the flow,

I think it's this:

Palpatine (as the emperor) fathered the child (Anakin) and turned to the dark side shortly after (or maybe just before).

Shmi was so saddened, she hid the child, denounced the father, and would tell anyone 'there was no father' simply to remove Palpatine's place in the family.

Now, this is probably also going to happen in EP3 with Anakin and Padmae since we know the kids are split-up, the mom dies (well, she's not in EP4-6) and Anakin turns 'bad' and into Vader. I'm sure if Padmae lived, she would have said 'there was no father' in EP5 or EP6 if asked by someone who didn't actually know.

I don't think so. The story of the virgin birth is a staple of all the mythologies throughout history. Joseph Campbell wrote many books about the history of myth, and Lucas is a huge fan of Campbell's. That is where he got most of his source material for Star Wars.

How did a Senator from Naboo end up (if you'll excuse my bluntness) screwing a slave from Tatooine?
